Recipe of the week: spinach alfredo

The pasta station at Lowry is always open, but you may not always be feeling whatever sauces they are offering. Have no fear! Instead try making your own alfredo.

First get a large bowl of spinach. Spinach simmers down to almost nothing when you cook it, so get as much as you can and I promise it won’t be too much. Give this bowl of greens to the stir fry station and ask them to sauté it in olive oil. You can also add mushrooms to this mix if you are so inclined. Onions or green onions also work. It is hard to go wrong with the vegetables here, so add whatever you like!

Once your spinach is warmly wilting away at the masterful hands of Lowry’s finest stir fry artists, head on over to the pasta station and get yourself a bowl of plain ol’ pasta noodles. (I ask for a half order because otherwise the pasta overflows the bowl and you want to leave room for the saucy goodness that is still to come).

Pour some olive oil over this and then add substantial amounts of mozzarella and parmesan cheese. Heat this in the microwave for roughly a minute and stir so that the melted cheese thoroughly coats your pasta.

Hopefully your spinach is done or near done by this point. Pick it up and season it to taste with garlic salt. Pro tip: add garlic salt to most things and you’ll see an improvement in taste. Don’t be afraid of the spice rack! It is your friend. Spices are friends…and food. Mix this with your pasta and voila! You have a Lowry version of spinach alfredo.

This recipe also works if you want to add chicken breast. I suppose ham bits or bacon bits would also be good in it. Idk, experiment liberally with meats in the alfredo! Go crazy! Follow your Never let anyone stop you from enjoying your carbs, Wooster!
